To mark the start of their Diamond Jubilee Tour yesterday (29 Mar), Todiwala of Cafe Spice Namaste and event partners Moving Venue cooked lunch for the Queen, the Duke of Edinburgh and local dignitaries at Walthamstow Assembley Hall.
Todiwala will cook the Indian version of the classic British shepherd's pie on tomorrow’s Saturday Kitchen. The dish, entitled The Country Captain, is one of the earliest examples of fusion cooking wherein spicing was gently introduced to the British in India.
Moving Venue and Café Spice Namaste are offering this Jubilee dish for events and in the restaurant for the rest of 2012.
The Queen’s Diamond Jubilee tour began in London with a visit to the boroughs of Redbridge, Walthamstow and Harrow.
Dan Johnson-Allen, operation director at Moving Venue, said: "To work on the first of the Queen’s Jubilee celebration events and support Cyrus was a great honour, however, the real heroes were the support of the talented team of staff and students from University of West London School of Hospitality, Westminster Kingsway College and Waltham Forest College."
