Event understands the list - which currently names 13 caterers including Moving Venue and Rocket Food - is being refreshed and could include major changes.
Joanna Moody, director of events at Zafferano, said: "We are hugely excited about the possibilities for fabulous entertainment this offers, and can foresee some truly amazing events this year."
Julian Saipe, managing director of Zafferano, told Event there was scope for theatrical food production at the venue. He said: "The John Madejski Garden is one of the highlights in terms of event spaces at the V&A. The beauty of the venue is that all of the spaces are stunning. It's one of the few listed venues in London where you can dance."
Contracts with the new approved V&A caterers are currently being signed and the full list will be released in the next few weeks.
