
Managed by Alba events, the temporary bar will take a month-long residency from 4-28 August in what was once Leith’s Biscuit Factory at 4-6 Anderson Place and will be open from 10pm to 3am each evening.
The bar will serve julep cocktails and classic American soul food as well as hosting talks, tastings and late-night jazz raves with Kansas Smitty's resident eight-piece jazz band.
Cocktails will include bespoke creations such as Smitty’s Julep – Jim Beam Double Wood, Fernet-Branca, raisin, peach, cassia, bark and mint – and the Scarborough Fair Julep – Jim Beam Honey, parsley, sage, rosemary, thyme, toasted almond, salted heather honey and mint.
Example dishes from the menu include The Jazz Jam Sandwich, a sweet take on a peanut butter and jelly sandwich, and Giacomo’s Heavyweight Champion Buttermilk Pancakes with crispy bacon and maple syrup.
This year's Edinburgh Fringe takes place from 5-29 August with 3,000 events planned across the city.
