RCapital, which saved the chain from bankruptcy in 2007, could open the new restaurants over the next five years as part of the strategy overseen by RCapital chairman Graham Sims, BP's former retail director.
Little Chef restaurants will also be equipped with drive-through services at some branches, while franchise sites will be offered for the first time since the diners were established in 1958.
Little Chef has suffered in recent times as customers have preferred to eat healthier alternatives and the business was close to going bust in 2007.
In 2008, RC Capital brought in celebrity chef Heston Blumenthal to revamp its menus with healthier options.
Earlier this year, Little Chef was subjected to a rebranding campaign that saw its logo of a chef lose the tray he was carrying.
The brand also featured in a 2009 Channel 4 documentary, in which Blumenthal attempted to revive its fortunes with a new restaurant design and menu, which will be rolled out nationwide as part of the revamp.
The brand made a £2.5m profit last year, compared with the £7.5m loss in the year RCapital bought it.
