The event is specifically looking for a "highly motivated" and "innovative" supplier that will enhance the public catering provision at the event, which attracts more than 155,000 visitors.
Interested parties are being invited along to this year’s show on 16 and 17 July to get a sense of the event.
"We are encouraging prospective concessioners to take an imaginative approach – to visit the show, review what we currently have on offer and to suggest options on how we can improve the diversity and quality," said director of operations Chris Murray.
"We are aware that today’s visitor may be more discerning, and therefore require a more diverse range of food options. We are prepared to consider design changes to the showground layout, an increase in the number of public enclosures and even an ‘on the day’ restaurant," he added.
The current public catering concessioner provides 63 mobile catering units selling a wide range of food and drink options, two themed bars and seven mobile bars.
The contract will be awarded in August 2012 and will be for one year with an option to extend it for a further three years.
The deadline for declarations of interest has been set as 1 December 2011 and outline proposals submitted by 1st March 2012.
