At the launch event, held at Roux at Parliament Square in Westminster, guests were able to taste a number of dishes that will be served at the temporary restaurant, called Chez Roux on the Prince’s Lawn, on 6 and 7 June.
The event begun with a champagne reception, followed by canapé versions of the proposed menu, which has been created by Albert and Michel. This included English asparagus, hen egg, feta cheese, aubergine caviar and truffle dressing, as well as pork belly with apple sauce.
Michel, who gave a speech, said he and his father were excited about the restaurant concept at Epsom Downs Racecourse. "These are exciting times to have Chez Roux at the most prestigious race on the finish line. What could be better than an event with the best horses with some great food, wine and company."
He added the menu will consist of four courses with a champagne reception on arrival for guests, as well as afternoon tea and wines selected by the Roux family.
Rupert Trevelyan, regional director of London racecourses at The Jockey Club, which owns Epsom Downs Racecourse, told Event: "The Investec Derby is a fantastic event, it has a lot of high-end customers attend so what we are looking at is to have a food offer that’s appropriate for that clientele, which is why we wanted to work with Albert and Michel. We have worked with them previously at The Jockey Club and they produce the best food possible."
He added 180 diners are expected to eat in Chez Roux on the Prince’s Lawn each day, but across the whole event there will be 4,000 attendees taking advantage of corporate hospitality.
Trevelyan said The Jockey Club would look to partner up with more professional chefs in the future for events such as the Investec Derby. "One of the things we do is having high-quality corporate hospitality, particularly for the high-end market, but in this day and age you have to work with people like the Rouxs because that is what the public want."
The Investec Derby Festival attracts more than 125,000 attendees during the two days.
