Chaired by Event’s editor Jeremy King, speakers on the panel included Absolute Taste managing director Lyndy Redding, The Recipe director David Wolanski, By Word of Mouth managing director Justin Tinne and Fabulous Feasts director David Hornby.
The entire panel agreed that the trend for short lead times is here to stay and none have dropped prices due to the economic downturn as this would compromise quality.
"The chefs are mainly involved for revenue, Gordon Ramsey got involved as he kept on being asked to create a catering arm," said Absolute Taste managing director Lyndy Redding.
The panel agreed that the chefs do not get involved with the logistics of an event but will always check over the menu to ensure a high standard of quality for their service.
