Orange and honey caramalised brussel sprouts

Fancy adding a twist to your brussel sprouts this Christmas? Event caterers Tonic suggest adding pancetta, the zest of half a fresh orange, two cinnamon sticks, honey, hazelnuts and goose fat to spice up the traditional Christmas vegetable.

'Christmess' - Slap Ya Papa and Marbles & Ware Collective

On 24 November, Slap Ya Papa and Marbles & Ware Collective will launch a deep south-inspired 'Christmess' feast at the Vaults in London. During its four-week run, a range of alternative Christmas foods will be served. These include everything from candied yams to truffled brussel sprouts, as well as cocktails and fine wines. On Sundays, Roast Dinners, designed by award-winning chef Andy Duncan of Hatchetts in Mayfair, will be served to guests.

Banana, clementine and mango smoothie

This fruity treat, courtesy of caterers Toni, will serve between 10 and 12 people, and requires 30 clementines, two large and ripe mangoes, six ripe bananas, one litre of whole milk or low-fat yoghurt and a handful of ice cubes. Halve the clementines and squeeze out the juice, then peel mangoes and slice flesh into rough pieces. Peel and slice bananas. Put all the ingredients into a blender or liquidiser and blend until the mixture is smooth.

Hot salted caramel rum

This warming cocktail is perfect for frosty, Christmas evenings. To make, it needs Goslings dark rum or Sailor Jerry, Monin salted caramel syrup, Apple juice, Angostura bitters and water. The apple, water and caramel syrup is steamed until warm, then the rum and bitters are added. Stir the mixture, and serve with a cinnamon stick.

Vanilla Espression - Aquum

If the Christmas partying is getting a little tiring, this caffeinated cocktail will definitely wake you up. It uses Tia Maria, Cariel, espresso and Gomme syrup. The ingredients are shaken and strained, then served in a martini glass. Decorate with a chocolate powder swirl and coffee beans.
